Water activity (aw) measures the energy status of water in a system — it tells you how tightly water is bound, structurally or chemically, inside a substance. Technically it is the relative humidity of air in equilibrium with a sample inside a sealed chamber. Water activity matters because it predicts safety and stability: microbial growth, chemical and biochemical reaction rates, and physical properties. It influences colour, odour, flavour, texture and shelf life of many products.

MS2100 is a full-function industrial instrument. Fitted with different sensors it measures the moisture value of air, liquids, gases and solids, so one meter serves several sampling points. Water activity is read over 0 – 1.00 aw with 0.001 aw resolution and ±0.015 aw repeatability; moisture is read over 0 – 100% RH with ±0.5% abs repeatability, and the working temperature range extends from −20 °C to 85 °C. Explosion-proof construction (Class I Group A/B/C/D, Class II Group E/F/G) allows use in hazardous areas, and three test modes — Smart, Project and Normal — match the instrument to routine checks or method-specific work.
